Baking soda is sodium bicarbonate — a mild alkali that raises baked goods, neutralises acids and odours, and works as a gentle abrasive for cleaning. It is the same substance as bicarbonate of soda; only the name differs by country.
What is Baking Soda?
Baking soda is sodium bicarbonate, a fine white powder that is mildly alkaline, water-soluble and cheap. Baking soda and bicarbonate of soda are identical — American versus British and South African naming. Recipes use them interchangeably.
Baking powder is not the same thing. It is baking soda plus a powdered acid and a starch. Baking soda needs an acid in the recipe; baking powder brings its own. Substituting without adjusting gives a flat bake or a soapy, metallic taste.
Two properties explain every use.
It reacts with acids to release carbon dioxide. Mixed with buttermilk, yoghurt, lemon juice or vinegar it produces the gas bubbles that make a batter rise — the same reaction as the fizz with citric acid.
It is a mild alkali and a soft abrasive. It neutralises acidic odours rather than masking them, and its crystals scrub without scratching most surfaces.
What is Baking Soda commonly used for?
In cooking:
- Raising cakes, muffins, scones, soda bread and biscuits, in recipes containing an acid.
- Browning — it raises pH and speeds the Maillard reaction, so a pinch caramelises onions faster.
- Tenderising meat, and softening dried beans.
In cleaning:
- Scouring sinks, baths, tiles, ovens and burnt-on pans.
- Deodorising the fridge, bins, drains, shoes and carpets.
- Cleaning inside kettles, flasks and mugs — tea and coffee stains especially.
- Freshening laundry, and boosting detergent in hard water.
- Unblocking slow drains, and cleaning silver in a foil-and-hot-water bath.
Around the house: soothing insect bites as a paste, smothering a small fat fire, and neutralising a battery acid spill.
On teeth: it is a genuine mild abrasive and appears in many toothpastes. It removes surface stains and is safe occasionally, but it contains no fluoride and is more abrasive than toothpaste. Used daily and vigorously it wears enamel, which does not grow back. Keep using fluoride toothpaste for actual protection.
Common household applications
Burnt pans. Cover the base with water, add two tablespoons, simmer ten minutes, cool and scrape. Far better than scrubbing cold.
Oven cleaning. Spread a thick paste over the interior, avoiding heating elements, leave overnight, wipe out, and finish with a little vinegar to fizz away the residue.
Slow drains. Half a cup down the drain, then half a cup of vinegar, left fifteen minutes and flushed with boiling water. Good for slow drains and smells — it will not clear a real blockage.
Fridge, carpets and laundry. An open box absorbs fridge odours for months. Sprinkle on carpets, leave a few hours, vacuum. Half a cup in the wash softens water so detergent works better.
Silver. Line a bowl with foil, add hot water and a few tablespoons of bicarb, and rest the silver against the foil. The tarnish transfers chemically, no scrubbing.
How to use Baking Soda appropriately
- In baking, measure it. Too much tastes soapy, and it needs an acid present or it will not raise.
- For cleaning, use a paste — three parts powder to one part water — or a sprinkle for deodorising.
- Give it time. Overnight beats immediate scrubbing on ovens and stains.
- Rinse thoroughly after cleaning anything that touches food or skin.
- Store it airtight and dry, and label the container.
- Test it before baking: a spoonful in vinegar should fizz vigorously.
- Do not use the fridge box for baking. It has spent months absorbing odours.

Safety, surfaces and situations to avoid
Never mix it with bleach, or with other cleaning chemicals — the combination is unpredictable and can release chlorine gas.
It is food-grade and low-hazard, but the powder irritates eyes and airways. Avoid the eyes, pour gently rather than tipping, and keep it away from small children.
Swallowing large amounts is genuinely risky, and this is the caution most people do not expect. Taken by the spoonful as an antacid — a common home remedy — it delivers a substantial sodium load and can cause dangerous shifts in blood chemistry. Stomach rupture has been reported when a large dose met a full stomach and produced gas faster than it could escape.
Do not use it as a regular antacid, and not at all with high blood pressure, heart failure, kidney disease, or a low-sodium diet. Purpose-made antacids are cheap and far safer, and persistent heartburn needs assessment.
Get medical advice if someone swallows a large quantity, particularly a child, and emergency help for severe abdominal pain, persistent vomiting, confusion or difficulty breathing afterwards.
